Why does melted chocolate seize?
Chocolate seizes when a small amount of water reaches melted chocolate and turns it from glossy liquid into a thick, grainy paste. Water dissolves some sugar, and the wet sugar draws cocoa particles into clumps. Steam, condensation, a damp spoon, or a water-based flavoring can trigger it. You can redirect seized chocolate into a sauce, ganache, icing, or filling by adding enough liquid, but it will no longer work as pure tempered chocolate for shells or dipping.
The surprise is not that chocolate and water can never mix. Ganache proves that they can. The problem is the awkward middle: too little liquid to form a smooth water-containing mixture, but enough to make sugar and cocoa particles gather into stubborn lumps.

Seizing is an event in melted chocolate. Bloom appears after chocolate has set or been stored. Unmelted pieces remain discrete; seized chocolate changes the texture of the liquid around them.
Where did the water come from?
The culprit is often less dramatic than pouring water into the bowl.
- Steam escaped from a saucepan and condensed on the bowl or utensil.
- A lid trapped condensation, which later dripped into the chocolate.
- The bowl, spatula, thermometer, or mold was not completely dry.
- A spoon returned to the bowl after touching wet fruit or another mixture.
- Vanilla extract, liqueur, coffee, juice, or another water-containing flavoring was added to plain melted chocolate.
- Cold chocolate met warm humid air and developed surface condensation.
King Arthur Baking's current water-and-chocolate explanation describes chocolate as cocoa solids, sugar, and cocoa butter with no water. Its explanation is specific: a small liquid addition causes water-soluble compounds and hygroscopic sugar crystals to draw together as particles leave the cocoa butter.
That mechanism also explains why more stirring does not reverse a seized batch. The composition has changed. Mechanical enthusiasm cannot remove water.
Can seized chocolate be saved?
It can often be repurposed, but “saved” needs a destination.
If you need tempered chocolate for a glossy bar, a thin shell, molded pieces, or a clean dipping coat, the seized batch is not recoverable for that job. King Arthur's tempering guide states that seized chocolate cannot be tempered or used as pure chocolate.
If you need a sauce, frosting, ganache, or filling, additional liquid can bring the mixture back to a smooth suspension. Use a liquid that belongs in the final recipe, warm enough not to shock the mixture, and add it gradually while stirring. The required quantity changes with chocolate percentage and the intended consistency, so follow a tested recipe rather than assuming one universal tablespoon will repair every bowl.
Use this decision:
- Stop heating and move the bowl away from steam.
- Confirm that the chocolate is seized rather than scorched.
- Decide whether the project requires pure tempered chocolate.
- If it does, start that coating or shell with a clean, dry batch.
- If it does not, choose a liquid-based destination and follow that recipe's ratio.
A seized batch redirected into ganache is still a different product. Do not put it into a mold designed for a crisp tempered shell and expect the original snap, release, or shelf behavior.
How do you prevent chocolate from seizing?
Dryness comes first. Wipe the bowl, spatula, thermometer probe, and mold, then look again at rims and handles where rinse water hides. Keep wet fruit and washed tools on a separate side of the workspace.
For microwave melting:
- Use a microwave-safe dry bowl.
- Chop chocolate into similar pieces.
- Heat in short bursts at reduced power.
- Stir between bursts, even when the pieces still look solid.
- Stop heating when only a few soft pieces remain and let stirring finish the melt.
For a water bath or double boiler:
- Use a heatproof bowl that sits securely.
- Keep the water below the bowl.
- Avoid vigorous boiling that throws steam around the rim.
- Remove the bowl before lifting a wet lid or utensil nearby.
- Dry the outside and base of the bowl before pouring from it.
Hot bowls, steam, and melted chocolate can burn skin. Use stable heatproof equipment and dry protection for your hands. Do not balance a bowl loosely over a pan or wipe hot equipment with a wet cloth.

Can you add flavoring without seizing the chocolate?
Check whether the flavoring contains water. Many extracts and liqueurs do. Adding a teaspoon directly to plain melted chocolate can create the same small-liquid problem as a splash from the sink.
Three safer routes are available:
- Use a flavoring specifically formulated by its manufacturer for chocolate and follow its dose and compatibility directions.
- Add the water-based flavoring as part of a tested ganache, sauce, or filling that already contains sufficient liquid.
- Put flavor outside the pure chocolate layer, such as in a dry topping or separate filling, when the recipe supports it.
Oil-based does not automatically mean suitable. Read the label for intended food use, allergens, and the manufacturer's directions. Do not add essential oil or a concentrated flavor merely because it mixes with fat; food suitability and safe quantity require product-specific evidence.
Does the type of chocolate change the problem?
Dark, milk, and white chocolate contain different proportions of cocoa solids, sugar, cocoa butter, milk ingredients, and other formulation components. King Arthur's published experiment and ratios show that the amount of liquid required to keep a mixture smooth changes with cacao percentage.
That is why a rescue instruction tested on one 62% dark chocolate should not be silently transferred to white chocolate, chips, compound coating, or an unknown bar. Check the label and the recipe. Chocolate chips may be formulated to retain shape, while compound coatings use different fats and do not follow every couverture tempering rule.
For allergies, remember that milk chocolate and white chocolate commonly contain milk, and other chocolate products may contain soy, nuts, peanuts, or sesame or carry cross-contact statements. The U.S. Food and Drug Administration's food-allergy guidance identifies the current nine major U.S. food allergens and advises reading the full packaged-food label. Recheck every ingredient added during a rescue rather than assuming the original chocolate label covers the finished mixture.
A clean restart checklist
Before melting the replacement batch:
- Empty the workspace of wet utensils.
- Wash equipment, then dry every surface completely.
- Open and read the chocolate and flavoring labels.
- Decide whether the project needs temper or only melted chocolate.
- Prepare toppings, molds, or dipping pieces before melting.
- Keep water-based ingredients out of the pure-chocolate bowl.
- Use short, controlled heat and stir often.
Chocolate is sensitive, but it is not mysterious. Seizing has a cause, and the fix begins by admitting that the original job and the rescued job may no longer be the same.
