Which chocolate is best for your mold project?
For solid molded chocolates, shortlist a couverture whose manufacturer lists molding and provides a tempering method. For thin filled shells, choose a product specifically intended for fine molding. For a no-temper project, consider a molding-compatible confectionery coating, recognizing that it is a different product. Check the exact package for allergens, follow chocolate and food-contact mold directions, and handle heat carefully; a shell does not make a perishable filling shelf-stable.

A solid tablet uses chocolate throughout its cavity. A filled bonbon has an outer shell, a separate center and a closure. Guittard's shell-molding description identifies that shell as tempered chocolate formed in a mold, then filled and sealed. Those are different projects even when their finished pieces look similar.

Why shortlist Callebaut 811 for general molding?
Callebaut describes 811 as a dark couverture with 54.5% cocoa and three-drop fluidity, including molding among its applications. That makes it a reasonable editorial starting point for someone choosing a versatile dark chocolate rather than shopping specifically for the thinnest possible shell.
Worth knowing: the product name alone is incomplete shopping information. The manufacturer's German shop listing, with the 400 g format selected, identifies SKU 811-E0-D94 and lists soy lecithin. Read your own pack; do not transfer its ingredient information to every regional variant or seller's repack.
Why shortlist Callebaut 2815 for thin shells?
The 2815 specification, order code 2815-2B-U76, lists high fluidity, 57.9% minimum dry cocoa solids and 38.7% fat. Its description expressly connects the formulation to thin shells through fine molding or enrobing.
Worth knowing: thin-shell suitability is not a promise about your finished shell thickness. We have not measured this product in a particular mold, and the specification does not tell you that every cavity will produce an identical wall. It also does not establish that 2815 tastes better than 811.
Use this option when a complete shell-making recipe or method calls for that kind of flow. Do not substitute it into a large hollow-figure project solely because higher fluidity sounds like a higher quality grade.
Why consider Wilton Light Cocoa Candy Melts?
Wilton's 12 oz. Light Cocoa product identifies molded candies with Wilton molds as an intended use. The package listing gives 340 g and SKU 191011673. Its Candy Melts guide distinguishes the confectionery coating from chocolate and says it does not require tempering.
Worth knowing: choose it as a coating in its own right, not as a disguised equivalent to a named couverture. Follow its package method and compatible mold directions. Do not borrow a thinning instruction from another coating, or assume that a treatment intended for dipping will preserve the result wanted in a mold. This buying guide supplies no additive formula.
What does fluidity tell you?
Fluidity describes how readily the melted product flows; it is not a taste score. In Callebaut's application guidance, three drops indicate versatility, four suit thin shells or sharply angular molds, and two suit large molded figures.
The important lesson is that maximum fluidity is not the universal objective. A larger figure may call for a different coating thickness than a small filled chocolate.
Keep the rating within its manufacturer's system. Do not silently equate another brand's symbol, viscosity description or flow measurement with a Callebaut drop count. For 2815 above, the opened specification says high fluidity; the comparison retains that wording rather than assigning an unverified numerical rating.
Cocoa percentage, meanwhile, is a composition statement. It does not replace an application specification. Record both fields on the shopping card instead of trying to derive one from the other.
Which tempering information should you find before buying?
For a couverture molding project, find the maker's complete method for the exact chocolate. Tempering controls cocoa-butter crystallization; it is more than melting until the bowl looks smooth.
Callebaut's tempering guide illustrates product-specific working stages: it lists 31–32°C for warming 811 to working temperature, compared with 29–30°C for 823 milk chocolate. These are stage examples, not complete melting, cooling or temper-testing instructions, and they are not a curve for 2815.
Copy the product code, method, units and working range together. If a chart's Celsius and Fahrenheit figures disagree, ask the manufacturer for clarification instead of guessing which controls. Do not turn a maximum temperature into a target.
For milk or white chocolate, repeat that document check with the chosen product. Changing the color of the chocolate is not a reason to reuse the dark product's settings.

Try it on a clearly hypothetical brief: “I want simple, unfilled cocoa-flavored shapes, and I do not want to temper.” The no-temper coating route survives the method criterion; the couverture routes do not meet that particular preference. That is a fit decision, not proof that coating is better chocolate.
Change the brief to “I want thin dark shells using a complete couverture method,” and the fine-molding specification becomes the more relevant evidence.
How much chocolate should you buy?
Separate finished-piece mass from the amount needed to work with the chosen method. Chocolate left in the bowl or used during shell formation is not automatically represented by the final pieces.
Here is an illustrative accounting exercise, not a tested mold yield or recommended batch:
- A project plan estimates 24 solid pieces at 10 g each: 240 g in finished pieces.
- Suppose that plan separately requires 80 g available for working: 320 g total.
- A 400 g package would leave 80 g unopened; a 340 g package would leave 20 g unopened.
These are package-size calculations, not interchangeable-product recommendations. The two 80 g amounts describe different things: one is inside the working allocation; the other remains outside the batch. Neither is a predicted waste rate.
For a real project, replace those assumptions with the exact recipe and actual production observations. Do not convert water capacity directly into chocolate weight or assume a filled piece's total weight is all chocolate. Start with an appropriately small purchase when the finished yield is unknown.
What safety checks belong before the first batch?
Use food-contact molds and heating equipment within their manufacturers' directions. Hot containers, water and steam can burn; use stable equipment, suitable dry hand protection and adult supervision around children. Keep tools clean and completely dry before contact with melted chocolate. Guittard warns that accidental water or steam exposure can cause seizing and thickening.
Read every ingredient label, including decorations. The FDA's allergy guidance explains both ingredient declarations and voluntary cross-contact warnings. Absence of an advisory statement does not prove absence of cross-contact. Resolve uncertain suitability with the manufacturer and recipient; shared molds and tools also matter.
For plain unfilled pieces, follow the product's storage directions. Filled chocolates need a separate plan. Under FoodSafety.gov's perishable-food guidance, refrigerate perishable fillings at 40°F or below within two hours, or one hour above 90°F. Do not let a coating's cool, dry storage instruction override those requirements.

Couverture is a useful starting point when you want molded chocolate and are prepared to temper it, but its intended application still matters. Check the exact formula's molding recommendation and fluidity. For a project that deliberately avoids tempering, a manufacturer-designated molding coating may fit better, with a different composition and eating experience.
Does a higher cocoa percentage mean thinner shells?
No. Cocoa percentage is not a substitute for a manufacturer's fluidity rating or molding recommendation. Choose using the exact product specification, not the largest percentage on the package. In this comparison, 811 is an all-purpose dark option while 2815 is specifically described for fine molding; that distinction comes from their documented uses.
Can I use Candy Melts without tempering?
Wilton says its Candy Melts do not require tempering and can be used for molded candies. Follow the current package method and use a compatible food-contact mold. The Light Cocoa product is a confectionery coating, not interchangeable with dark couverture in every recipe. Hot containers and melted coating require careful, supervised handling.
Is dark molding chocolate suitable for someone allergic to milk?
Do not decide from the word dark. Read the current package and check the recipient's specific allergy requirements, including cross-contact from ingredients and shared tools. FDA notes reports of undeclared milk in dark chocolate. An absent advisory warning does not establish absence of cross-contact; ask the manufacturer when information is unclear.
Can filled molded chocolates be stored like the original chocolate?
